Hay......:)
Yesterday I found cage-free humane certified eggs at my grocery. A dozen large eggs was $2.19. I am so excited. Every time I would need eggs I would feel so horrible to buy them. These chickens are allowed to walk around and nest.
I think that there is hope for this world afterall.

I'm not vegan. I eat a little fish , shrimp, eggs and cheese. Nothing with a MaMa. Hummm.... everything has a MaMa really but you know no chicken, pork or beef.
I just dream of a humane world where we repurpose and recycle and are good stewards of the lesser of us.

I wish little children/anyone knew when they eat half their Mickey Dee's burger and throw the rest away that some cow lost it's life for that burger.........
Oh well it's Sunday and that is my sermon for today.LOL

I agree! I love eggs and am so happy when I get cage-free eggs. I want a happy chicken laying the eggs I eat :)!!

Actually, Mem, there was an article about the latest e-coli problem with the beef, and it was said that as many a 100 animals may be a part of ONE hamburger. It blows your mind...

For me, it was easy to become a vegetarian, and I have been one for about 3 years. Not that I'm one of those people who try to "convert" others. All I have control over...is ME! ;)

When I saw the cows being dragged to slaughter on the news I took a oath to myself to never eat beef again. I don't know how long ago that was on TV but I have not missed it one drop...EVER.
I am not a true Vegan, in fact real vegans would be appalled at me for eating cheese , eggs etc.
I guess I'm not making a statement to convert people like you said, but I can do what I can do within myself.
I don't think I have any problem with eating enough fiber. Good grief do I eat fiber.;)
My friends worry about my protein but I feel great. Aren't beans and rice a complete protein?
Do you have a favorite recipe?
Right now I am crazy about the vegan italian sausages.
This morning I had 100% whole wheat pancakes w/sugar-free syrup and 2 vegan breakfast sausages. So so good on a Sunday morning.
I also use alot of TVP( textured vegetable protein) in my chili and beans. It is a whole lot cheaper than the bags of meat subsitute by Morningstar and Boca. I think it is Bob's Mill's????
I wonder how I will adapt my cornbread dressing recipe this Thanksgiving. What can I do to mimic the chicken broth? Maybe add Pepperidge farm stuffing mix to the cornbread? What do you think??? Does anyone have a suggestion?

Hmm can't help you there. But there has to be some manufactured item that will lend chicken taste.
We eat meat so I am of no help. Good luck in your life change- I am sure you will do great.

We get country eggs from a relative.....makes me want to ask this question.....how to get the poop off the egg shells before I use them. I just kind of find it gross to crack an egg in the skillet or in my brownies with poop dried on the shells.

For the record.....I was 12 years old before I knew that eggs had poop on them when laid.....I guess that is where the term "chicken shit" comes from....at lease for here, as we are not country people by any means.

Better late, than never!

As requested by Memmey, here's a colorful, quick, easy, inexpensive and healthy vegetarian recipe that I like...
and if you are not a vegetarian, please don't feel left out! You can substitute 20 oz. of hot Italian sausage for the Morning Star Farm "fake" sausage.

Bow Ties and Broccolini

(I think that broccolini might not be available everywhere...if you can't find it where you live, you can use frozen/fresh broccoli rabe, and if you can't find that, you can use good ol' broccoli, but parboil it first, before Step #3).

12 ounces of bow-tie (farfalle) pasta (whole wheat pasta makes it even healthier!)
1 tbsp. oil (I use olive oil)
2 garlic cloves, peeled and chopped, IF DESIRED
1 pkg. (8 oz.) Morning Star Farm (fake) Sausage Patties (NOT the maple flavored ones), cut into bite size pieces
1 lb. broccolini or broccoli rabe, or broccoli, cut crosswise in half
1 pint grape tomatoes
1/2 cup (2 oz.) shredded Parmesan

1. Cook pasta as box directs in salted water, reserving 1 cup pasta cooking water before draining. Set aside.

2. Heat oil (and garlic, if desired) in large non-stick skillet over medium high heat. Heat sausage thoroughly.

3. Add reserved pasta water and broccolini to skillet. Cover and cook three minutes. Add tomatoes, cover and cook 2 minutes until tomatoes just begin to burst.

4. Toss with cooked pasta and Parmesan and serve with additional Parmesan, if desired.

Enjoy! :)

I'm making that!!!! Sounds really good. I love the Morn-star patties. I love the maple ones with whole wheat pancakes. Yummmm:).

I had a envie ( desire, longing....down here if you crave something you say I had an envie for it... on-vee) for some collards. In North Louisiana they boil collards with bacon. I don't really like anything just boiled anymore so my friend, who has lived down here her whole life, told me to saute them. OMGosh they were fabulous!!!!!

Here how it went.....saute some onion and red pepper flakes in olive oil till the onion is nearly clear then rough chop your collards or mustard greens OR turnip greens and add them to the hot onions. Now just sweat them down, no extra water. Season them with Soul seasoning or salt and pepper. If your from the South you know that is great with a hot piece of cornbread. I added a little extra olive oil when I sauteed my onions so it would coat the greens better. Now that may not sound good to some of you but I swear it is soooooo good.AND good for you.

Food glorious food!!!!!! I'm never gonna be thin....dang it.

Two, I forgot to ask you if you like the Morn-star Italian sausages. They are the best thing they make if you ask me. If you eat them please tell me what you pay for them. My last box was $3.19 for 4. Really it is not much more than meat sausages I would think. If I am lucky Wally-world has them on sale for $2.88 every twelveth of never.:rolleyes:

Oh, Memmey...I have got to try your collards recipe...sounds so yummy!

Keep in mind I'm from the North...and I've never had collards! I'll have to look in one of the Korean veggie stores around here - I HAVE seen frozen collard greens...would those work okay?

And yes, I love the Morningstar Italian sausages too! I'll have to check the price the next time I shop...I think they're a little more expensive than $3.19 but not by much.

Once upon a time, when Morning Star Farms was fairly new, and before they were bought by Kellogg's :mad:, they had a lot of wonderful products...Nine Bean Loaf and Lentil Loaf were excellent - they were never publicized and not many stores had them, so they said that there wasn't enough "interest" in them.

Now they've discontinued the hot dogs and corn dogs and lots of their customers are very unhappy, including me.

I like that word, "envie"...I could sort of hear it being said, with a Cajun/French accent! ;)

I've been using Better than Bouillon's "No-chicken" and "No-beef" soup bases fpr years. Both work really well to add a "meaty" flavor to soups, stews, stuffing, etc. They carry it at my local grocery store, so you may want to check and see if you can find it. It's wonderful stuff :)

P.S....I've been a vegetarian for 15 years (since I was 14). I feel the exact same way you described in your post. I still can't believe that we haven't progressed further in this country in regards to the way our food animals are treated. Its absolutely shameful! And, if you haven't yet, try to find a DVD called "Food, Inc.". It came out a few months ago and its a really wonderful documentary that I wish EVERYONE would watch, so they can know the truth about where their dinner really comes from.

Thanks Nikki... I have been gone for the Thanksgiving holiday and I am just now stopping by here. I am absolutly gonna get some of the bouillion cubes.

We had the estate sale at my Dad's ( he is in the nursing home) and our lunch came from the gorcery. It was horrible. I thought they were making it fresh and when I picked it up it was *#frozen#*. It was all salt and fat. We wasted a lot of money that day on that garbage. I ate dressing , mac/ cheese and broccoli/rice. Awful food.
I will be cooking Christmas dinner though....thank goodness.

Nikki anything you could share with us would be great. Chapter Two is a vegan girl also. We need to share recipes OK?

I was thinking of you on the holiday, Memmey...I'm so sorry your meal was a mess! At least Christmas dinner will be something to look forward to.

How did your sale go? I'm just today trying to put a couple things on eBay. So much going on here and no matter what I'm doing, I feel like I should be doing something else!

Tomorrow I'll post my recipe for low fat Fettucine Alfredo. It could fool anyone into thinking it is the real "heart attack on a plate" meal...but it's NOT! ;)

Nikki - I'm with you regarding all you said. I sometimes hesitate to go on about the animals and vegetarianism because, somehow, non-veggies sometimes get annoyed/angry, and I don't want to alienate anyone here. But I agree with your suggestion that people watch "Food, Inc." if they truly want to be enlightened.
