View Full Version : Grilled Tomato Recipe

With all the home grown tomatoes available this month, I came across a really tastey and easy way to use them. Thought I would share.

Cut top off tomatoes and remove any remaining core.
Cut a little flat spot on the bottom, so tomato will stand up.
Sprinkle top heavily with parmesan cheese.
Get your grill going at a medium heat.
Put foil on grill and cover with canola cooking spray.
Sit tomatoes upright on foil.
Shake Italian seasonings on top of tomatoes and drizzle with olive oil.
Cook about 10-15 minutes until heated through, but not mushy.

Enjoy!

That sounds good. It's hard to go wrong with Parmesan cheese on just about anything. I wonder if this recipe would work in the broiler, too. By BBQ hasn't worked for a few years (though it is still taking up space on my back porch). Thanks for the recipe!

I'm like shabby, I love parmesan on just about anything. I dried some of my 'Juliet' tomatoes in my food dryer, but haven't tried them on anything. I had dried a few in my oven a couple of weeks ago and put them on homemade focaccia bread--very good!

Mmmmmm, I agree - that sounds so yummy! And I'll join the parmesan cheese fan club too, please!
