We are enjoying a blast of arctic air here and I thought it would be nice to make a big pot of soup this weekend. I would make chili--my favorite--but my husband doesn't eat it. :(
Anyone have any great soup recipes to share?

I just made a wonderful chicken chili. For once, everyone in my family liked it!
4 cups of cooked chicken
1 large onion
1 tomato
2 tablespoons of chopped cilantro
1 teaspoon chopped basil
2 cloves of garlic
1/4 cup olive oil
3 cups chicken broth
2 teaspoons chili powder
1 pinch ground cloves
2 (15 or 16 ounce) white beans, drained and rinsed
tortilla chips
1. Cut the meat into 1/2 inch cubes. Chop the onion, tomato and the herbs. Finely dice the garlic.
2. Heat the oil in a soup pot on medium heat. Add the onions and garlic; cook on medium for about 3 minutes, lowering the heat as necessary to make sure the garlic doesn't burn.
3. Add all the other ingredients except for the tomato and the tortilla chips. Bring to a boil, reduce to a simmer and cook on low for 1 hour.

This is my favorite soup EVER, and it's very fast and easy. It will also nearly cure a cold. We call it "The Soup" at our house, but it is an adaptation of an old Cooking Light recipe from when I was in grad school.
Take 4 or 5 garlic cloves and thinly slice them
Chop a bunch of green onions
Sautee garlic and onions in olive oil for a few minutes (careful the garlic will burn). If I want some spice, I add a shake or two of dried red pepper at this point.
When the garlic and onions are soft but still kind of green, add white wine. I'm not sure how much officially, but I usually pour myself a BIG glass and dring a bit during the previous steps, then I dump my glass in the pot at the right time. If I had to guess, I would say it's around 1.5 cups of wine.
Pour yourself another glass of wine (since yours is empty now) while the garlic, onions, and wine simmer for a few minutes.
Add one big carton of chicken broth, and let it come to a boil.
Add 3 cheese tortellini from the refrigerated section of the grocery store (1 big container or 2 smaller ones).
Cook pasta until it is 3/4 of the way done stirring occasionally. Then add 1 or 2 cups of chopped tomatoes.
Let that simmer for about another 1/2 glass of wine or 5 minutes.
Then when the pasta is all the way done, add a big bag of fresh spinach, and put a lid on the pot for a couple of minutes.
When the spinach is wilted, stir and serve. It's excellent soup!!

Cohen, are you sure it was the soup that nearly cured the cold, or was it all of the wine drinking? :D
I make home made chicken noodle soup, chili, beef stew, etc,.. I can send you a few recipe sites if you want them. Let me know. I have tons of recipes buried in my cabinets, be it books, recipe cards, magazines, etc.,. It is an obsession of mine.
How do you enjoy the arctic blast? I hate the one we are having. Maybe you should try Cohen`s recipe, and only use the wine. :p

Cohencottage, I definitely want to try your soup :D. You cook similarly to me...a little for the cook, a little for the pot...more for the cook.

Both soups sound terrific~ hands down I love soup on any given night....

I don't drink THAT much while cooking!!! :) It is an excellent recipe, and you can really modify it to add whatever ingredients are on hand. I made it for DH the other night when he had a fever, and it made him feel better w/out any extra wine! Also, if you are stuffed up and have lots of congestion in your sinuses, the red pepper will really help clear you out...just don't add too much.

My secret cure for a head cold is very spicy Chinese food and beer. I swear it works. I think the ginger and red pepper in the Chinese food clears the nasal passages and the hops in the beer is good for... well it's got to be good for something. (It sounds like I'm making this up as I go along, huh?)

My dad swears by red pepper. He puts it in water and drinks it everyday. He used to put garlic in it, too, but my mom won't let him now that they've moved in to town:p. He thinks it is the best cure for sinus problems.

I love me some garlic, but I'm not sure I could drink it in water, though. My secret sinus weapon (besides the soup) is to use a netti pot at least twice a day, BUT instead of using salt water, I use baking soda water. The baking soda is basic and breaks up all the junk in your head. It's kind of amazing (and gross). My stepdad is a physician and is the one that recommended that to me, and he was right.

I use a netti pot when I have a cold too. It's very disgusting, but it works. I'll try almost anything before putting a pill in my mouth.

I have had a nasty sinus thing going on for over a week and have tried the red pepper, spicy Chinese food and mass quantities of beer and it's still hanging in there.
Any other suggestions? :confused:

It really depends on how chlorinated your water is...I would start with a teaspoon and then go up or down from there depending on how it feels. If you do it right, there shouldn't be any burning. It ROCKS...When I'm not sick, I do it 2 x day (morning and night), and I'll also do it after doing something dirty (mowing the grass, brushing the dogs, etc). When I have a cold or a sinus infection, I'll do it several times per day. One time I was able to get over an awful sinus infection without antibiotics just by doing the netti pot with the OTC meds. My stepdad recommends a decongestant, mucus thinner, anti-inflammatory, and at least 1 L of water per day when you are sick. My personal favorite drug is Mucinex D b/c its a decongestant and mucus thinner, then I just take Advil. If you treat the symptoms when they first appear, you can usually avoid a 2ndary infection...

Cohen subscribes to the Julia Child method of cooking, I believe. :) That gave me such a chuckle.
I also like that it's just called "The Soup" at your house.

Okay, I'm sort of inventing a recipe as it is freezing here today. I baked some chicken in a little chicken broth using a small casserole dish in the oven and seasoned to taste (garlic/red pepper, salt, pepper, paprika, a drizzle of olive oil). Then, I dumped a couple of cans of white kidney beans in my crock pot. I sauteed some onions and tore some pieces of fresh cilantro into the cooking onions letting them melt and brown a little. Then, I plopped that stuff in the crock pot. When the chicken finished cooking. I shred it with two forks on a plate and added it to the mix. I completely cheated and dumped in a container of McCormick "chili powder" mix. (I don't have time to figure out all the spices this week.) Then, I added a little chicken broth to the mixture. At this time, it is all simmering away. (It snowed here today ... we took a walk and had a snowball fight.) I'm going to make some sweet cornbread (Martha White mix with a little sweet corn added-in) and I am contemplating adding some stewed or diced tomatoes to the mixture. I plan to serve it with a little tiny glop of sour cream. Anyway, I'll let you all know how it turns out. I tend to cook 1/2 wit a recipe, 1/2 with inspiration, and then a little smidgen of help with a meal helper packet from the store...hee-hee.

Okra:D. I love, love it fried, memmey~but it is good in soups, too. It is one of my favorite foods every summer. (I freeze it sometimes, too)

We eat a lot of fried okra, but that's the only way my family will eat it. It is, in fact, the little one's favorite vegetable. That, and turnips. :eek:

Sunday I put some olive oil in a big pot and sauted some celery, onions, bell pepper and garlic.
Next I added a big bag of okra and one can of italian diced tomatoes. I added a little sea salt and let it simmer for hours and at the last while I made some success brown rice I added some peeled shrimp. It was wonderful. Shrimp amd Okra gumbo
I buy bags of peeled devined shrimp that are flash frozen. You can just get an handful of them out and put them in water and they defrost fast. My grocery will advertise them buy one get one free lots of time and I stock up. I need to hurry and buy more because when Lent comes they won't be on sale anymore.
That is South Louisiana comfort food. It smells heavenly cooking on a cold day.

Ooo ooo!! I have a great recipe for chicken and dumplings that I will post tomorrow b/c I don't have the energy tonight. This morning I was up at 5 for bootcamp, then worked outside in 19 degree weather all day, and then went to Pilates. Do I get a fitness gold star or something??

Well, instead of a gold star, I got a cold. My DH (which stands for dumb husband today) has had one for the last week, and I had successfully evaded infection. Yesterday a.m. I woke up with a sore throat and attributed it to allergies. I know that I probably would have gotten sick anyway, but I can't help but think that standing in the cold all day didn't help.
How do you know if you should stay home from work for a whole day or just rest and come in late?

I think you use the standard that you use when deciding whether to excerise with a cold OR not. If it is in your head it is OK , if it is in your chest ,no way.
A day to rest never hurt anyone provided that you actually REST and try not to do chores since you have the day off.
What in the world were ya'll doing outside in 19 degree weather??????:confused:

Well, I was going to take a nap in the morning and see how I felt at lunch and possibly go in at lunch, but I slept from 9:30 to 2:30! I actually did rest instead of doing chores (but I really wanted to do chores), and then I went to bed at 10:30 and slept until 7:15. I feel better today, but not well yet.
I actually set my alarm for 5:30 and considered going to bootcamp, but it didn't happen.
My regular day job is for an environmental consulting firm, and we were doing a stream survey at a mitigation bank. Basically we took survey equipment (rod, laser, etc) and surveyed the length of a stream and then two cross sections. It wasn't 19 all day, but I don't think we went much above freezing. Yuck.

I really enjoy this one...
White Chili
1 lb. boneless chicken breasts cut into 1/2 inch cubes
1 medium onion, chopped
1/2 tsp. garlic powder
1 Tablespoon vegetable oil
2 cans northern beans, rinsed
1 can chicken broth
1 cans chopped green chilies (to taste)
1 tsp. salt
1 tsp. ground cumin
1 tsp. oregano
1/2 tsp. pepper
1/4 tsp. cayenne pepper
1 cup sour cream
In a large saucepan, saute chicken, onion, and garlic powder in oil
until chicken is no longer pink. Add beans, broth, chilies, and
seasonings. Bring to a boil. Simmer uncovered for 30 minutes.
Remove from heat and stir in sour cream.

This is the white chili recipe I wanted last week when I ended up inventing some sort of tex-mex chilli (my above recipe ended up with corn and tomatoes and a dallop of sour cream). It wasn't bad at all ... but I'm hitting "print" on this one. Thanks!

It looks soooooooo yummy! I would love to try it, but my husband will not eat tomatoes in any way, shape or form, and he will not pick them out so I've learned not to cook anything with tomatoes. Suppose I could leave those out? :confused:

"Garden Vegetable Soup"
Ingredients
* 4 tablespoons olive oil
* 2 cups chopped leeks, white part only (from approximately 3 medium leeks)
* 2 tablespoons finely minced garlic
* Kosher salt
* 2 cups carrots, peeled and chopped into rounds (approximately 2 medium)
* 2 cups peeled and diced potatoes
* 2 cups fresh green beans, broken or cut into 3/4-inch pieces
* 2 quarts chicken or vegetable broth
* 4 cups peeled, seeded, and chopped tomatoes
* 2 ears corn, kernels removed
* 1/2 teaspoon freshly ground black pepper
* 1/4 cup packed, chopped fresh parsley leaves
* 1 to 2 teaspoons freshly squeezed lemon juice
Directions
Heat the olive oil in large, heavy-bottomed stockpot over medium-low heat. Once hot, add the leeks, garlic, and a pinch of salt and sweat until they begin to soften, approximately 7 to 8 minutes. Add the carrots, potatoes, and green beans and continue to cook for 4 to 5 more minutes, stirring occasionally.
Add the stock, increase the heat to high, and bring to a simmer. Once simmering, add the tomatoes, corn kernels, and pepper. Reduce the heat to low, cover, and cook until the vegetables are fork tender, approximately 25 to 30 minutes. Remove from heat and add the parsley and lemon juice. Season, to taste, with kosher salt. Serve immediately.
